Nico and Chef Nicolas Delaroque are known for modern French cuisine with attention to season and place. In this case, the season is the beginning of summer and the place is western Marin County where Tomales Farmstead Creamery makes its cheeses at Toluma Farm. The “farmstead” designation means the milk comes from right here -- healthy goats and sheep on 160 acres of rolling green hills, Organically Certified and Animal Welfare Approved. The farmstead was started in 2003 by David Jablons and Tamara Hicks with a strong emphasis on environmental restoration. During our tour, we will visit the animals and hear a thoughtful explanation of how this beautiful property is a model of land stewardship.
