Free Union Grass Farm is an OITF home away from home. For our seasoned band of culinary wanderers, it’s a little too comfortable. The thought arises; maybe it’s time to park the bus and never leave? Joel and Erica raise ducks, chickens, pigs, cows - and grass. Grass farming means plenty of that beautiful pasture rests for a period of time so the grass can grow; that’s where we set the table. Our guest chef Tarver King is in the business of grass too, by extension. Ingredients from grass farms are the meat that goes with the potatoes (and other vegetables) that grow in Patowmack’s farm fields. Chef Tarver is a 2017 James Beard semi-finalist for Best Chef: Mid-Atlantic.
