Northern Italy by way of Central Texas. Chef Nicholas Yanes was chef and creative director for Uchi restaurants and now he has his own place. Travels to Italy inspire his approach as does the produce from farms like Tecolote, where Farmers David Pitre and Katie Kraemer grow more than 150 varieties of organic produce. That’s a lot of inspiration to choose from.
