Taylor Shellfish Farms grow what are arguably the most celebrated oysters in the Pacific. The Taylor family has farmed shellfish in the Puget Sound since 1890 and have been pioneers of sustainability from the beginning. We’ll set our table along the shore of their hatchery in scenic Quilcene, where shellfish grow just off the beach. Alongside the Hood Canal, we’ll slurp oysters and toast Washington wine with a meal from Nick Coffey. Nick is a celebrated Seattle chef who recently moved out to Lopez Island, inspired to experiment with new ingredients like those that grow wild on the islands. He works closely with local farmers, fisherpeople and foragers to build creative menus that are deeply rooted in their place.
