This will be our first dinner in the Finger Lakes region after more than a decade away. Our first tour of North America in 2004 included a dinner in the field at Lou Johns’ Blue Heron Farm. This time, we set the table at The North Farm in Geneva, New York, with the Paillard-Elkin family. The family sought out Klaas and Mary-Howell, local farmers and champions of heritage grain, to steward their land back in the 90s. The Martens grow 1,400 acres of organic grain in fields at The North Farm and along the shores of Seneca Lake. Their farm work extends to advocacy, education and research in the growing of organic grains. Chef Christopher of F.L.X. Table is both executive chef and master sommelier. In 2017, F.L.X. Table was awarded USA Today’s Best New Restaurant in the country. Grain will certainly be on the menu.
